Shout out to the 18 year old man child for doing his best to keep them fed. </p><p><br /></p><p><b><span style="color: #134f5c; font-size: large;">Sausage, pepper, onions, cheese--what more do we need?</span></b></p><p><b><span style="color: #134f5c; font-size: large;"><br /></span></b></p><p><b><span style="color: #134f5c;">Ingredients:<br /><br /></span></b></p><p><b><span style="color: #e69138;">Italian sausage</span><span style="color: #134f5c;"> (pre-cooked if you want, no judgement here) I used 5</span></b></p><p><b><span style="color: #f6b26b;">2 Bell peppers</span><span style="color: #134f5c;">, any color, I like to mix it up</span></b></p><p><b><span style="color: #e69138;">ricotta cheese</span><span style="color: #134f5c;">, a few scoops</span></b></p><p><b><span style="color: #f6b26b;">mozzarella cheese</span><span style="color: #134f5c;"> (get pre-shredded, it's easier)</span></b></p><p><b><span style="color: #f6b26b;">1 small onion</span><span style="color: #134f5c;"> (I used half a medium one)</span></b></p><p><b><span style="color: #f6b26b;">garlic powder</span></b></p><p><b><span style="color: #f6b26b;">salt/pepper</span></b></p><p><b><span style="color: #f6b26b;">Italian seasoning</span></b></p><p><b><span style="color: #f6b26b;">Olive oil,</span><span style="color: #134f5c;"> about 2 tablespoon I didn't measure, just pour on a little</span></b></p><p><span style="color: #134f5c;"><b><br /></b></span></p><p><span style="color: #134f5c;"><b>Instructions:</b></span></p><p><span style="color: #134f5c;"><b>If using uncooked sausage, brown in pain- set aside to cool a bit (I browned them the night before and then put them in the fridge) Skip this step if you're smart and bought premade (you could also use meatballs--just saying, options)</b></span></p><p><span style="color: #134f5c;"><b><br /></b></span></p><p><span style="color: #134f5c;"><b>Cut onion into slices, and then cut in half (or use frozen ones, again easier)</b></span></p><p><span style="color: #134f5c;"><b>Cut peppers into slices (or buy frozen peppers and onions together)</b></span></p><p><span style="color: #134f5c;"><b>*If you use frozen, defrost them a bit in the microwave and then drain the water out)</b></span></p><p><span style="color: #134f5c;"><b>Throw peppers and onions in a casserole dish. Drizzle with olive oil, add salt, pepper, garlic powder and 2-3 dollops of ricotta. I totally forgot I was planning to blog again. Life has been pretty intense since the last post. One of the kids was having some health issues. Work was super stressful. And on Tuesday our dog, Rori, died. So, blogging was definitely the last thing on my mind.<br /><br />I have been staying pretty steady on the scale, but I am pretty sure I'm down some inches. I will update on Sunday. I did a quick measure today and my waist is about half an inches smaller. I was going to treat myself to lunch out today, but now that I have decided to measure again on Sunday, the lunch will have to wait 😜Sunday will be two weeks since I last measured, so hoping for some good results.<br />
<br />
I really believe that we need to find things besides the scale to motivate us, and to help us stay on track. If I was just using the scale, I weigh the same as last week, so it might be easy to think "fuck it, I'll just eat whatever since it's not working anyway." Well, that wouldn't be the best option, would it? Especially since i have a fitness test coming up! So, I looked smaller in the mirror and measured. Wow! Already down about an inch? It would be stupid to sabotage myself with a cheat meal at this point! I can wait two more weeks to eat something off plan. But, there is a part of me that is really screaming, "Don't do it!" Why? Because I could see some real change if I don't let the fitness test derail me like it so often does.<br />
<br />
Usually, I give up for about 2 months, and then I get serious again as the next test approaches. What if this time, I eat my celebratory meal, and then the next day I get right back to it? By the next test in June, I won't even have to worry. I'll already be well under my max. Wow, that a novel idea 🙄<br />
<br />
I tend to lose about a pound a week when I stick to pretty decent eating. It would be about 17 weeks between my tests, I could be below my goal weight and in a healthy BMI if I stick to it. Yeah, deep thoughts for a Friday day off. Let's do it!<br />

So, life is stressful.<br />

Yesterday, I wanted to fall face first into a plate of noodles. I didn't. I had some parmesan chicken thighs, veggies, and some couscous. If course, couscous isn't quite on plan but it was way better than a steaming plate of pad thai. I had stopped on the way home from work and decided to get sushi. Which I did, but I didn't eat it last night because my roommate had made the chicken.<br />

I saved it for lunch and had it to break my fast along with some chick fajita, sour cream, and jalapenos.<br />
<br />
My weight held steady from yesterday, so I was pleased with that. Of course, that means I have more time on my hands. More time to sit around and watch TV. So, why not try to get back on here and chat about life a little.<br />

I have started to be "keto" not in the sense of less than 20 net carbs or anything like that. I am still pretty much primal, I just realized at one point that when I am really sticking to primal, I am probably in ketosis most of the time. So, in May 2018, I tested it, and I was right. Just 1 day of getting back to basics and I was in ketosis. So, now I spend time in keto groups, because so many of the paleo places have become a ghost town.<br />
<br />
I even have my own group on Facebook, Utterly Lazy, Kinda Clean Keto...lol Yeah, it's silly but it works for now.<br />
<br />
I plan to take measurements tomorrow and start a for real 30 day challenge. I haven't completed one in years, and I am way higher on my body fat percentage. I would love to get back down to about 24%. I think I'm probably close to 36% right now. A lot has happened since the last time I wrote. A lot. Talk about stress, and life just trying to knock you down. Okay, the emotions I'm feeling, I don't think I'm quite ready for that yet. So, more on the stress another day.<br />

Yeah, it's slop...and it is DELICIOUS! I have been getting a lot of request for a recipe for "slop". Well, there really is no recipe, that's the beauty of it, just throw stuff in the pan, if the flavors go well together it will taste good. Really, it's that easy. Now, there was recent discussion that I needed to change the name of this concoction because according to Savage Dave if it doesn't have eggs in it, then it isn't slop. Hmmm, I just don't know what else to call it. So, for now it is still slop, because well...I said so ;)<br />
<br />
So, what is slop you may be wondering. It is a simple meal made in just one or two pans that has everything you need for a meal. It is also delicious and routinely devoured by the children. We like a lot of different flavors, so it rarely tastes the same two times in a row.<br />
<br />
Here are the very basic ingredients:<br />
ground beef<br />
liquid of some sort; soup, broth, water, canned tomatoes, etc.<br />
diced or chopped onion- usually half<br />
garlic, usually about 4-5 cloves minced<br />
salt and pepper (of course)<br />
spices: pick these according to what liquid you are using or what flavor profile you're in the mood <br />
for, such as Italian, Indian, etc.<br />
rice if it fits your template (it fits ours because we feed a bazillion people with this)<br />
eggs if you want to feed more people and don't have enough beef<br />
frozen or fresh veggies<br />
<br />
Cook the onions and garlic.<br />
Brown the meat in the same pan (sometimes I leave them in there others I take them out and add them back later.)<br />
Add spices to taste, like 1-2 tab;e spoons or something. Maybe not quite that much.<br />
Add liquid then add rice and veggies if you want them and simmer for about 20 minutes covered<br />
<br />
Yup, it's really that easy. We rarely make one that the kids won't eat.<br />
<br />
So, last night I took some pictures while I was cooking, because well, people like pictures.<br />

Now, this wasn't a typical slop since we had only a tiny bit of rice left. What's a girl to do? Add a can of pumpkin of course! I had grated some carrots and added those to the onions and garlic too, so extra yumminess! Since I did pumpkin and grated carrots, I figured I would go with a sweeter flavor profile. I put in about half a can of coconut milk and then used my Moroccan spice blend to season it along with salt, pepper and smoked paprika. Have you ever tried smoked paprika? If you haven't you should! It is so yummy and adds a nice depth of flavor to just about everything. I used 3.4 of the large bag of frozen spinsh, the entire can of pumpkin and about 1 to 1.5 pounds of beef for this. There was a small bowl leftover after we all had our fill. Perfect for my lunch at work, it if wasn't a Friday night.<br />

I sautéed some cabbage on the side because I was worried it just wouldn't be enough without the rice. I wish I knew where my plain white plate went that I bought for taking pictures. Ah well, you get the idea. I think this is an appropriate time to make the comment about veggies and eating "paleo/primal". This is now many "servings"? I don't even know. But, it has; cabbage, carrots, onion, pumpkin and spinach...all on one plate. How is this NOT healthy? Seriously?!?!?!?!?</div>

The good part is it was one small bowl...those small pyrex bowls you use for ice cream or putting pre-chopped ingredients. After I thought about it, I stopped eating more. The only issue right now is that i know it stalls my weight loss and the weight loss is a priority right now.<br />

Today we are working on getting ready for the move by cleaning and de-cluttering. That feels good. Surprisingly, the boys are actually being helpful. Taking forever but still helpful.<br />

I have decide to just keep track of what i eat on paper and not use the websites, I am just not being really consistent with it. I find writing it easier, and my goal isn't to count carbs or calories, but to just make sure I am getting nutrient dense foods and not too much treat stuff, like chocolate, etc.<br />

I *think* they were brownies or chocolate cake. I can't say for sure because I didn't even open the package. Some people would say, just eat the food. But, I didn't WANT to eat the food. So,maybe they don't look as yummy to you, but I really enjoy berries with various forms of creamy yumminess! And now I can enjoy my hot cocoa (heavy cream, coconut milk, maple syrup and cocoa powder) and relish the fact that I didn't let the cake/brownie control me. Does this mean I will never, ever eat another brownie? Hell no! I love me some brownies. It just means that today was not the day for them. Those brownies were not the ones that needed me to eat them. When I come across the brownies that speak to my soul...well, those brownies I WILL eat and I'll enjoy every last bite. No regrets.<br />

Momma's Butt Lift 30 Day ChallengeYes, I want to get my booty lifted. And how to I think I'll manage that? Squats of course! Squats and lunges and other manners of torture! My eats were decent today. I ended up buying some Terra chips and eating some of them, not perfectly "on plan" and clean. Other than that it was a good day. I never knew just how awesome dates with gorgonzola can be...yummy! We had zucchini and tomatoes with onions as our veggie tonight and chicken legs for protein, I also had a side of potato with butter. I didn't eat any other real meals, some bone broth, beef jerky, bacon, dates and kimchi. One of those days that would be hard to track properly. I find it easier to track when I am at work, so I plan to track tomorrow. I am not sure if I plan to only count MFP or sparkpeople as tracking, or if just keeping a log and writing it down will suffice. We'll see how it goes. I don't particularly care for doing it on the computer, it is sooo tedious.<br />

So, as I mentioned I took before shots. I am not sure why I feel awkward sharing them. They are not as bad as my very first before shots. So, I decided to share. Hopefully we will see some good progress at the end of the month!<br />

My darn thyroid decided to not function as well as I need it to. I always feel like I am making excuses when I say it was my thyroid. How often do we hear people say that? I'm fat because I have a thyroid problem? Yeah, frequently. I WAS fat because of it. I discovered how to work with my body and I lost the weight. So, when I went from 34.5/35 inch waist in December back to a 37.5-38 inch waist in March, I knew something was wrong. I spoke to my doctor and he ordered some labs and indeed my thyroid was not functioning as well as it should. My vitamin D was also extremely low. <br />
<br />
I did some research and discovered that vitamin D is closely related to thyroid function, it also can lead to weight gain when your D is low. At my doctors suggestion I started an aggressive vitamin D supplementation. We also decided that I should increase my Armour thyroid medication. This has helped me lose a little bit of weight, which is great. Now, I need to get focused...since I can with the brain fog and exhaustion cleared up. I think there is possibly some stress induced waist gain in there too, hopefully the things i have started to help me relax will be beneficial too.<br />
<br />
It stinks though, I was able to get down from 37.5/38 inches to 36 in about five weeks. I took my fitness test on Aril 24 and failed since the max waist circumference is 35.5 inches. Yup,I failed by half an inch. I need to re-test in the end of June or beginning of July. If I fail again it will be bad news. So, I am getting back to really tracking what I eat and doing the workouts that have worked in the past. I also think that getting on here and being accountable for my actions will help. <br />

It's that time again. In July we are driving from Fairbanks Alaska to Dayton Ohio. Five children, two adults, a cat and a large Golden Retriever. Three years ago we did a very similar trip, where we drove from New Jersey to Alaska. We had a great time, camping (old style in a tent) and sleeping in random hotels along the way. We stopped at a bunch of great places such as Old Faithful at Yellowstone and Mount Rushmore. We survived puking kids and a dog with diarrhea. It was a lot of fun and the kids STILL talk about the cool things we saw. <br />

I am hoping that we can have just as much, if not more fun than we did last time. If you want to help us out, we surely wouldn't mind. Last time I didn't blog as much about our trip as I could have, I totally plan to do more this time. I love going back and reading what I wrote because my memory stinks for those small funny things the kids do and say. I am so excited and really would love to make this trip even more memorable than the last one!<br />

And it's Yummy!It has been far too long since i sat down and blogged. I did eventually pass my fitness test, but I have been very lazy with working towards my goals. THe past week or so I have been better, but I still have a ways to go. I had a few too many days eating foods I know I shouldn't because they just don't make me feel well.<br />

So, lately I have been back to trying to eat better and feed the kids better, etc. Even my hubby and older son have decided that wheat is bad. The 13 year old goes around saying, "wheat is PAIN!"<br />
<br />
He has agreed to do the Perfect Health Diet and my eats seem to reflect that too. Some rice and occasional potatoes and tapioca. Which brings me to wraps! A while ago a friend introduced me to Brazilian Cheese Bread, and we all love it. Well, the other day SavageDave mentioned that he was watching TV and that in Brazil they use tapioca in lots of things, including pancakes and I was intrigued. A quick google search resulted in finding one recipe, that was written with metric measurements and while, yes I can READ metric, my scale needs a new battery. So, I decided to wing it.<br />

That morning I made breakfast pancakes, and while they were okay, they weren't much to write about. The kids ate them and I will work on improving that recipe. That night I made some that were more savory and those were a HIT! They work great as replacements for tortillas, or other wraps.<br />

Ingredients:<br />
<br />
1 cup tapioca starch/flour<br />
1 tbsp fat (oil or butter both work well) I personally like the buttery taste.<br />
about 2/3 cup liquid (I used a combo of canned coconut milk and water)<br />
1/2 tsp sea salt<br />
approx 1 cup shredded cheese, not packed<br />
1 room temperature egg<br />

combine all ingredients, it should be runny like pancake batter, or even a little thinner than that.<br />
<br />
heat skillet on medium...make sure you let it heat up, turn it on as you mix your ingredients together. A drop of water should "dance"<br />
Now, you can do this part anyway you like, but after trial and error and due to the nature of tapioca flour the way I ended up doing it works well. <br />
<br />
Use a "gravy" ladle or something that holds about 1/4 cup of batter. Pick up the pan and pour the batter into the hot pan and immediately start to tip it around in a circular motion to spread the batter into a thin crepe or pancake. I keep tipping until almost all the runny batter is gone to make them about 4-5 inches in diameter.<br />
<br />
Let it sit, be patient don't rush, until the batter is dry on the top side and golden brown on the bottom and flip. Then wait until that side is golden. That's it.<br />
<br />
If the pan is too hot you will get big bubbles, too cold and it will take forever and quite possibly stick. I used both my stainless skillet and cast iron, no oil on the pan.<br />

Ah well, shit happens. The rest of the day I did fine. I weighed in this a.m. at 162, down from my last weight of 164 eight days ago. Of course, at one point last week I was back up to about 167...so I am totally happy with where I am now.<br />

I made some super delicious banana muffins! Too bad I never write stuff down so I don't even know exactly what I used. I can try typing it out, but I can't promise yours would come out as good as mine.<br />
<br />
2 sweet potatoes roasted<br />
2 eggs<br />
1 large over ripe banana<br />
1 tsp cinnamon<br />
about 3 tbsp honey<br />
about 1 tsp molasses<br />
1/2 tsp baking powder<br />
1/2 tsp salt<br />
1 tsp vanilla<br />
3 generous tbsp coconut flour<br />
3 tablespoons plain yogurt<br />
1/2 cup chocolate chips<br />

Peel the taters, and combine all of the 'wet' ingredients. In a bowl combine the coconut flour, baking powder and salt. I use a stick blender to combine the wet ingredients until smooth. Stir in dry ingredients, mix well. Then add 1/2 cup chocolate chips. Scoop into paper lined muffin tins, or drop by about a teaspoon onto a cookie sheet. Bake about 0 minutes or until they feel done to the touch....not too squishy. Enjoy!<br />

I did okay today. I decided to do this half way through the day, so we'll ignore the one Hershey Kiss I ate. Other than that it was one square of dark chocolate as a treat. Everything else I ate was good. One down 29 to go. Hopefully it results in getting over this hump and fluctuating between 163 and 167. I want to get solidly into the 150s again. Good sleep and getting back to tabata and HIIT should help. Back to the elliptical two times a week to get things burning. <br />

I am now working out with a partner early mornings on Mon, Wed, Fri. It will make getting it in easier and won't interfere with the kids' activities. So rejoice with me for making progress. I am so glad I decided to bite the bullet and pay the trainer. I am already feeling stronger, not just with push-ups but with my squats too. I can't WAIT until Saturday to lift heavy stuff again! We do lighter weights and more reps during the week.<br />

I don't understand why so many women are after to pick things up and put them down. I love lifting it is fun and challenging and rewarding. I feel better after it for sure, better than running...blah.<br />
<br />
My goal for the next two weeks is to do thirty minutes of cardio three days a week, not too difficult since I already do it at least twice a week. The difference is that I have to do a hard day, a light day and a medium day. Today was my hard day, so I did thirty minutes of intervals on the elliptical. Boy could I feel it. I hadn't done intense intervals in quite a while and I could tell. It will definitely help me get that run time down some. I did a little test on Tuesday and it took me eighteen minutes to do the 1.5 mile run. It was sad. I may run it tomorrow to see how it goes, faster to make it more of a 'medium' run, Tuesday was pretty easy. I need to be at about fifteen minutes or less for my fitness test, but I am shooting for 14 or less. Eventually I want to be under thirteen, but that may take a while.<br />
<br />
I am really tempted to try a push-up, a real one in the morning, but I don't want to be disappointed if I can't do it. We'll see how I feel in the morning. Changing my hand position has made such a huge difference. I am really feeling like this will work.<br />
<br />
The trainer will re-do my weight and measurements on Saturday too. So, here I am 166.4 pounds and 3.5 months post-partum. Let's see what a few more weeks with the trainer get me :D I am only about 10-15 pounds more than I was before. Not so happy with what i see now. I hope getting back into the 153 range will have me looking a lot better.</div>
